1 pound gravlaks in 12 pieces
24 thin squares of flaky pastry
1/2 pound of spinach, whole
2 cups white wine sauce
1 2/3 ounces butter
1 yellow onion
1 egg
Salt and pepper
To Serve 4:
Skin the salmon and divide the fish into 12 pieces. Place each
piece of salmon on a pastry square.
Chop the onion and saute in butter until soft. Add the coarsely
chopped spinach. Season with salt and pepper.
Distribute the onion and spinach on top of the salmon. Place the
remaining pastry pieces on top of the salmon
fillings. Press the edges well together and crush with the beaten whole
egg. Place on a baking sheet in a
preheated oven at 300 degrees F for 50 minutes.
Serve with white wine sauce. Accompany pastry squares with fresh
mixed salad greens and a tangy
dressing.
