Creamed Halibut

1 cup cooked halibut, flaked
5 tbsp. butter
3 tbsp. flour
2 cups hot milk
1/2 tsp. salt
1/4 tsp. white pepper
dash of cayenne pepper
1 tbsp. lemon juice

 


1 green onion, minced
1/2 cup cooked peas
2 hard-boiled eggs, chopped
1/2 cup bread crumbs

Melt 2 tbsp. of the butter.  Stir in flour and cook until bubbly, then beat in hot milk, cooking
until sauce thickens and boils.

Remove from heat and season with salt, pepper, cayenne, and lemon juice. Stir in halibut,
green onion, peas, and chopped eggs.  Pour into a small buttered casserole and top with the
remaining 3 tbsp. butter mixed with crumbs.  Bake at 350 degrees until the crumbs brown.
Serves two.
