Sweet & Sour Halibut


4 fresh halibut fillets
1 cucumber, peeled, seeded and cut into matchsticks
1 carrot, peeled, and cut into matchsticks
1 sweet pickle, cut into matchsticks
1 tsp. fresh gingerroot, chopped
1/2 cup onion, minced
2 tbsp. salt
2 tbsp. sugar
1/2 cup vinegar
1/2 cup water
4 tbsp. olive oil
1 tbsp. cornstarch
2 tbsp. soy sauce
2 garlic cloves, minced

Combine cucumber, carrot, pickle, gingerroot, onion, 1 tsp. salt, sugar, vinegar, and 1/2 cup water. Marinate halibut in this mixture for 45 minutes. Remove halibut and reserve marinade.

Place halibut on a rack over 2 quarts salted water and 2 tbsp. oil. Steam fish for 20 minutes, or until fish flakes.

Strain vegetables from marinade and reserve broth. Mix cornstarch and soy sauce into liquid.  Saute garlic in remaining oil until brown. Add marinade liquid and cook, stirring until thickened.  Return vegetables to sauce and heat. Pour sauce over halibut.  Serves four.
