3 lbs. fresh halibut fillets 4 tbsp. butter 1 tbsp. minced onion 2/3 cup orange juice 1/3 cup dry white wine 1 tsp. grated orange rind segments of 2 large oranges, peeled milk flour
salt and white pepper
Dip fillets into milk, then dust with flour.
Saute in 3 tbsp. butter until well browned on both sides and halibut flakes easily. Season with salt and pepper and keep warm. Cook minced onion in butter remaining in pan until tender.
Stir in orange juice,
wine, and grated rind.
Season with salt and pepper and simmer for 5 minutes. Strain sauce into another pan and blend in remaining 1 tbsp. butter. Add orange segments and heat through. Arrange segments around fillets and pour sauce over. Serves six.
